Using Kerrygold Irish butter-that has a higher butterfat content than the average American butter. This translates into a richer, creamier texture . Kerrygold’s is a little different from other European butters because it has a lot more flavor.
I use Ghirardelli for the triple chocolate which has an intense but not overpowering flavor, Guittard with its rich flavor for the hand made decorations, with notes of coffee and fruit, and Callebaut , the best dark Belgian chocolate with hints of espresso, caramel and smoke.
